Pancakes with Maple Syrup

Sunday is the perfect day for pancakes! Light, fluffy, golden pancakes drizzled with maple syrup and melty butter...yum! And so quick and easy to make.


This recipe is the perfect base to build on. Berries, Biscoff, banana...so many options!



Makes 12 pancakes, so I guess that serves.....2? :P

Prep: 10 minutes

Cook: 10 minutes


Ingredients

2 cups plain flour

2 tsp baking powder

2 tbsp caster sugar

Pinch of salt

1 egg, whisked

1 3/4 cups milk

1 tsp vanilla essence

Butter, for cooking


Method

  1. Sift flour into a large bowl and add baking powder, sugar and salt.

  2. Make a well in the middle of the flour and pour in the egg, milk and vanilla and whisk until smooth.

  3. Heat a large frying pan over medium heat and grease with butter. Add the batter in 1/4 cup measures and cook for two minutes or until the undersides are golden. You can tell it's time to flip them when little bubbles begin to form on the top. Flip and cook the other side for two minutes, then remove to a plate. Repeat with the remaining batter until you have 12 pancakes.

  4. Divide pancakes among plates and top each with a pat of butter and a hefty drizzle of maple syrup. Amazing!
