Do you deserve a treat this weekend? Well these decadent pancakes are here for you! Biscoff is a relatively new discovery for me and to be honest I could probably have done without knowing of its existence - the amazing spiced spread reminds me of the cookies my nanna used to dole out when we were little, and it has a small truckload of sugar in it, but damn it's delicious! These pancakes serve up a double dose of it and are without doubt a 'sometimes food' - but if you've had a hard week and it's a rainy Saturday morning and your team lost the footy last night, I say treat yo'self! Also, they are topped with bananas so that's healthy, right? ;)
Makes 6 pancakes

Cook time: 10 minutes
Ingredients
1/4 cup Biscoff spread
1 egg
1 tbsp caster sugar
2 tbsp melted butter
3/4 cup milk
3/4 cup plain flour
2 tsp baking powder
1/2 tsp salt
Extra butter, for cooking
To top:
1 large banana, peeled and sliced
1/4 cup Biscoff spread, melted in short bursts in the microwave
Method
Combine the flour and baking powder in a large bowl and make a well.
Whisk the Biscoff spread, the egg, milk and melted butter together in a bowl or jug. Pour into the well in the dry ingredients and stir together until just combined.
Heat a large frying pan over medium heat. Add the butter and let it melt until just beginning to bubble. Use a 1/4 cup measure or ladle to add the pancake batter to the pan. I usually cook 2 pancakes at a time, keeping them warm in the oven in between. Repeat until you have 6 medium sized pancakes.
Melt your additional Biscoff in short bursts in the microwave until it has a pourable consistency. Top your pancakes with bananas and pour over the Biscoff spread. Devour them on the couch and don't even think about the calories!
