Avocado and Ashed Goats Cheese on Sourdough

When my breakfast is healthy and pretty I always feel like I'm starting my day off right! This came about after I picked up a beautiful loaf of fresh sourdough at the Yarraville Farmers Market, which paired perfectly with an avocado that I caught during the 20 minutes in which it was neither unripe nor overripe (anyone else find this with avocados? You have to be ready to pounce!) The ashed goats cheese is from Meredith Dairy and it easily my favourite thing in the world. Topped with some sesame seeds, chili flakes and fresh mint, this is just a divine start to your morning!


Serves 2

Prep: 5 minutes

Cook: 3 minutes (or however long your toaster takes!)


Ingredients

2 slices fresh sourdough

1 ripe avocado

20g ashed goats cheese

Sesame seeds, chili flakes and mint leaves, to serve

Olive oil


Method:

  1. Slice your avocado in half. Ditch the pit. Slice it along the diagonal and remove from the skin.

  2. Toast your sourdough.

  3. Top your toasted sourdough with avocado, crumbled goats cheese, sesame seeds, chili flakes and mint leaves. Give it a drizzle of olive oil (or truffle oil if you're feeling fancy!) and dig in! Too easy!
